Garlic and Pine Nuts Green Beans! (שעועית ירוקה)

I wasn’t going to write this simple recipe up…. Just for that reason… it is so simple.

But I have been asked to! So I am!

Those who’ve been flying with me to Israel have noticed that green beans are a very popular option on menus along with all the different types of potato sides offered.

Over the years more and more people are conscious about avoiding carbs. Green beans are a great alternative and is filling too.

Here’s my really quick and easy recipe which I like to add to a simple midweek meal.

Enjoy!

One packet of petite whole green beans. (I like Trader Joe’s.) also the smaller beans are tastier than the larger ones.

2 full tablespoons olive oil

3 cloves of garlic- chopped

1 teaspoon cumin

½ teaspoon sea salt

½ teaspoon turmeric

1 teaspoon Philadelphia Israeli spice mix. Or if unavailable where you live use sweet paprika.

½ teaspoon ground white pepper

Half a cup of pine nuts

All spices can be adjusted to taste.

Heat oil in pan. Add pine nuts and toss for two minutes until slightly golden.

Add all dry spices and mix together in oil with nuts for a minute or two. This brings out the flavors of the spices.

Add green beans and toss together. Cook for about 15 minutes mixing often to cover all the beans.

Add garlic last and cook for about 5 more minutes. Garlic burns fast so don’t add it in the beginning.

Serve on its own or as a side dish! Great over rice or cous cous for a vegan meal!
