This is the easiest pie you will ever make! Adding Israeli/MiddleEastern fresh spices from the market is the key to the delicious flavors that you can taste in this pie!
I love making my own pastry but sometimes you just don't have the time or the desire to start with all the fuss...I always have a couple of packets of frozen puff pastry in my freezer...just in case!
Using almost out of date veggies from the freezer is another thing I like to include in my recipes. I have a problem throwing food out! I had some mushrooms that I needed to use up and a couple of onions too...you can use any veggies you have!
This can be made vegan...options in the recipe
So here is all you need:
1 large Onion chopped
2 packets of frozen puff pastry..in the US it is a much smaller amount than the one I used in the video (I used an extra large packet sold in Israel on a roll but any will do) you can halve the ingredients if you want to use just one packet.
8 oz or 225 grams of Bella white mushrooms chopped
1 cup of chopped parsley or according to taste
2 tablespoons olive oil
1 egg whisked for brushing (for vegan use brushed almond milk)
½ cup of shredded parmesan cheese (optional)
1 teaspoon salt
1 teaspoon cumin
½ teaspoon turmeric
½ black ground pepper
1 teaspoon (philadelphia spice or sweet paprika)
1 teaspoon of Zaatar spice for topping
Flour for dusting
Turn oven to 350 degrees
Heat oil in pan and add the onions. Sauté until golden
Add spices and cook on low to medium heat for 3-4 minutes until well blended with the onions
Add mushrooms and mix. Cook for 4 minutes
Add chopped parsley and mix
Sprinkle flour on your work space. Roll our your puff pastry and brush the edges of the pastry sheet with the beaten egg
Spoon out your mushroom and onion mix onto to the middle of your pastry.
Close the pastry sides all the way around leaving the center open. (See video at bottom of page)

Sprinkle cheese and Zaatar spice on top
Place in oven for about 30 minutes. Check after 20 minutes. Every oven is different. Pie is ready when golden brown on top and bottom of pie is slightly firm.
