Baked Seasoned Mediterranean Rainbow Trout!

One of our favorite meals is this Mediterranean fish dish with delicate seasoning and flavors that make this delicious dish a healthy and quick option for any dinner night.

Serve with fluffy rice and and an Israeli salad and you have the perfect meal!


Serves 2. Double the quantities for bigger servings.

2 whole rainbow trout fish, deboned with head and tail off.

2 tablespoons olive oil.

½ teaspoon salt or adjust to taste.

½ teaspoon black pepper.

1 teaspoon cumin.

1 teaspoon paprika.

1 tablespoon chopped parsley for garnish.

½ a lemon sliced for garnish.

Heat oven to 400 degrees.

In a frying pan heat 1 tablespoon of olive oil. Rub paprika, salt, pepper and cumin on both sides of fish. Fry in pan for about 3 minutes on each side to crisp skin a little. Transfer fish into baking pan. Pour oil from pan on top and add the other tablespoon of olive oil spreading evenly on fish adding any extra seasoning you desire to the pan.

Bake in oven for approximately 20 minutes, take out and poke skin in a few spots with a fork. Put back in oven for about 10 more minutes or until the skin looks browned and crispy. Sprinkle chopped parsley and arrange on a plate with sliced Lemon.

Serve with fluffy white Basmati Rice and a bean salad or an Israeli Salad and you have the perfect healthy meal!
