My mother's bean, anchovies and tomato salad - made with love!




This delicious salad is unique to our family!


My mother made it every time she had guests and every time the guests would go crazy about it! I started making it when I entertained and it was the most loved salad on the buffet!


In fact, when I started writing this blog, my good friend Elana reminded me to add it to my recipes! For a vegan version simply leave out the anchovies!


Simple, healthy goodness and full of love!


Ingredients:


4 medium tomatoes, sliced and quartered

4 Sprigs of green onions, chopped small or thinly sliced red onions (optional)

Juice of half a fresh Lemon

1 can of butterbeans drained well

Half a can of anchovies, chopped small

Half a cup of olives, green, black or mixed. I like to use mixed

½ cup of parsley, chopped coarsely

½ teaspoon salt

½ teaspoon of black pepper

2 tablespoons olive oil

Amount can be doubled for a larger salad


In a salad bowl, add tomatoes, parsley and butterbeans.



Add olives, onions, fresh lemon juice, olive oil, salt and pepper. Mix. Add the anchovies and toss all together with a wide spoon taking care not to smash the soft beans.


That's all there is to it! So delicious and fresh tasting!


Serve as an Appetizer, part of a buffet or a side dish.
