This is a dish that took me under 30 minutes to prepare and cook! So tender with Israeli seasoning that create a quick but delicous and healthy dinner!
What you need:
2 high quality fresh Salmon fillets with skin on
2-3 tablespoons olive oil
1 cup chopped fresh cilantro
1 tsp cumin
1tsp salt
1 tsp Israeli philadlephia spice (or sweet paprika)
1/2 tsp turmeric
1/2 tsp black ground pepper
3 cloves garlic chopped or sliced thin
All spices can be altered to taste
To prepare:
Pat dry the salmon with a paper towel. Cut with a sharp knife into chunks.
Heat olive oil in pan. Reduce heat. Add spices one by one and stir on low to medium heat.
It is important to "fry" the spices first. Something my Egyptian Jewish grandmother Rosa taught everyone in the family. This brings out the flavor of the spice. If you just add it to a liquid like a soup or a sauce without frying it first it won't taste the same!
Add the salmon chunks to the spiced olive oil and cook on each side of the chunk for about 3 minutes or unil it looks a light golden brown.
Add chopped garlic and cilantro and mix for 3 minutes longer. Total cooking time shouldn't be more than 12-15 minutes to keep the chuks tender!
And voila! Serve with rice or pasta or just a salad for a light lunch!
