Israeli Orange and Coconut cake (עוגת תפוזים וקוקוס) A popular moist cake that is simply delicious!



One of the most popular cakes in Israel is a homemade Orange and Coconut cake. I have been meaning to write out this recipe for a long time. After many friends requesting it I finally typed it out!


It is very simple to bake and also dairy free. Because of its simplicity it is baked in many homes often for Shabbat! It includes ingredients you might already have at home or otherwise are easy to get at any supermarket.


You can also make this without a mixer if you like, using a hand whisk as it blends easily together.


You can make cupcakes instead. Ideal for adding to a lunch box. Use the same exact recipe.


Every time I serve this cake with other desserts, it is a favorite and is the first to disappear off the plate! So here it is, try it and let me know how you like it. Enjoy!!




Ingredients


1 ½ cups all-purpose (plain) flour

1 packet of instant vanilla pudding (80 grams)

4 Large eggs

3/4 cup sugar

1 cup canola oil

1 cup orange juice

½ cup of coconut flakes (I use sweetened but if you like your cake less sweet use unsweetened)

10 grams of baking powder

Spray oil for greasing the baking tin


This is how you prepare it


Heat oven to 350f or 180c


Spray a baking tin with oil covering bottom and sides.


Or use a cupcake tin and line with cupcake cases.


In a mixer bowl put eggs and sugar and whisk until thoroughly blended and light in color. Or whisk by hand.


Add oil and orange juice and continue whisking.


Add vanilla pudding, flour, baking powder and coconut flakes and mix well until all the ingredients are smoothly blended together.


Pour into greased cake tin and bake for about 45 minutes. Check by poking a toothpick in the center. If it comes out clear the cake is ready.


If making cupcakes, pour into lined cupcake pan. Bake for about 15-20 minutes and check by inserting a tooth pick and if it comes out dry they are ready.


Everyone's oven temperature and cake tin size differs. If the tooth pick does not come out clean put the cake back in the oven for 10-15 minutes more. Check again.
