Sometimes you just want to cook something easy.
This delicious vegan side dish is so quick and simple and only has a few main ingredients with fresh Middle Eastern seasoning.
It is great as a meal served with cous cous, rice or pasta too.
I served it with grilled seasoned chicken thighs which I think are the most tender part and a baked sweet potato. A simple and quick uncomplicated meal!
Here’s all you need:
1 large tomato chopped.
1 small box of baby Bella mushrooms sliced.
A cup of fresh chopped parsley.
2 cloves garlic - crushed
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon Jerusalem mix
½ teaspoon black pepper
½ teaspoon turmeric
½ teaspoon paprika
To prepare:
Heat oil in pan and add chopped tomatoes. Sauté for 10 minutes in medium heat until the tomatoes are soft. Add the spices and garlic. Mix in.
Add the mushroom slices and toss together for 10 minutes until mushrooms are cooked.
Just before serving add chopped parsley and toss for a minute.
Serve with your favorite meal or just by itself! That’s all there is to it!
